I've been at it since a little before 4:00 AM. I am new to the forums and I posted my initial post and questions in the MES group forum. Admin told me I'd get more answers here. I'll post questions like this here in the future.

I hope this does not break any rules but I do have a couple of questions about where I am in the smoking process right now. My IT was at 157 and started to drop, I have it back up but I'm not sure if that is the right thing to do. It is a nice "choice" cut good marbling and a load of fat, nearly an inch along the side of the flat.. but rather than write everything over I'm going to post a link to the thread in MES... I know better now though, this is a one time thing. If you can take a look and give me any advice I'd appreciate it.

Hi Julien, scanned over your write up and it sounds like everything is going fine at the moment, duresk got you pointed in the right direction.  I've never used a MES, so can't help you with any questions about that, but I love brisket and will be happy to jump in with an opinion on any questions about that.
