Pick up a pack of bone in csr's or a nice butt steak.

Beef rIbs have the same cook time and process. Most everything else will finish faster or way after.

I'll be doing baby backs and chicken. I'll put the chicken on around hour three.

Yep, Best idea is to go with a shorter cooking meat and add it after the Ribs have been going a couple hours. A fattie would be a good appetizer...JJ

I thought about getting a butt ,  doesn't that have  a much longer cook time  1.5 hours per pound I would need a 3 to 6 pound butt.

You want Butt, go for it. There is no reason you can't cut it up into softball sized chunks or 3-4" slabs, they will smoke up in short order...JJ

You're doing it wrong.

What you should be doing is smoking a brisket. And then find other things to smoke along the way.

yea but the wife wants ribs , and well you know how that goes, I know the 3-2-1 takes 6 hours and 4 lb butt will take 6-9 hours so ill get started about 6 am or so with the butt  throw the ribs on at 8 am  everything will finish up around 2pm  gna serve it up with some corn , fresh mac n cheese , and some bacon green beans.
