I had a friend years back give me some breakfast sausage he made and it was fantastic ,told me he put apple sauce in the mix ,

Has anyone givin this a go before ?  I am gonna mix some pork sausage up this afternoon and was thinking of putting some apple sauce in it ,I will wait a few hours to see if anyone has input on this ,thanks in advance !!!
 
Though I've never made it, I've seen some breakfast sausages which contain minced or diced apple. Commercially, Aidell's offers a chicken and apple breakfast sausage. Maybe your friend used apple sauce as a hack or shortcut.

Can't help you with a formulation, but maybe one of the more experienced sausage makers here can.
 
we used to put apple sauce in the breakfast sausage at one of the stores i've worked at,i can't exactly remember how much it was quite awhile ago but i want to say it was a 28 or 32 oz. jar for 25 lb.you'll have to experiment a little to see what you like.i wouldn't add any water though for the sauce will give it enough moisture. good luck
