I am from Colorado Springs, Colorado and am surprised there isn't a Smoker's Group for Coloradoans on this site! I'd be willing to start one, if that's permissible. ;) Well the short and sweet is that I lived in Mississippi on the border of Memphis, TN so you can imagine where I was introduced to the difference between "grilling" and BBQ'ing. I grew a great love for low & slow smoking with my off-set cast iron smoker/grill. To date my best meats to cook are chicken thighs to die for and pork spare ribs (specifically with my Mother In-Law's Apple Butter!). 

Though I can continue to smoke meat this way, I've decided it's time to build a Smoke-House. Living in Colorado where I was born & raised I've gotten back into hunting for the meat. I have a Muzzle-Loader Elk Hunt coming up in September that I pray yields ALOT of great game meat for me to really break in the Smoke House I am building! Your prayers are welcome too, as we are hunting a new unit that is between 9,000-14,000 ft. Elk will likely be higher up as the snow typically won't drive them to lower ground until late October, so we will be doing a lot of hiking, and prayerfully packing out that meat. ;) 

Thanks for reading about my new adventure! My Smoke-House is designed to be 8'x8'x8', with lots of racks and hanging hooks for additional Hams, Bacon, Sausage & Fish!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Sounds like a big smoke house. Post some pics in the build section. when you get started.

Welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Good luck with your smokehouse build, and with your elk hunt...nothing better than elk meat!  Just ask when you need help and someone here will have the answer.

Thank you everyone for the well wishes! I will post pics as I begin the process of bldg my smoke house. I've designed it big to accomodate several different meat adventures @ once. Who knows though, I may scale 'er down once I work on framing it out. Either way, it will be a lot of fun to build! Thank you again guys.
