Alright, I'm from Cleveland County, North Carolina. I LOVE smoked meat and grilling in general. I have smoked some ribs, turkey and the occassional whole hog, but this has always been with or under supervision of my dad, so I've got a lot to learn!
I currently have an offset smoker but the smoke box was destroyed so I'm ordering a new one. So for now I'll be using an indirect heat placing the meat on the opposite side from the coals.
