Thread Starter

We made some deer sausage this weekend. Didn't have time to smoke it yet. We froze it and now I want to smoke it. Which wood would is used most ? Next if I pull it out the freezer, can I smoke it with out defrosting it ?

A lot of woods go well with deer sausage. A lot of it is personal choice, IMO. I usually use hickory and cherry. Sometimes add in some oak. Or some apple.

You will need to thaw out the meat before smoking. Otherwise, it won't cook properly/evenly.

Good luck!
