Just ordered a smokin-it model 2. Seasoning it tonight as we speak. Can't wait to start smoking , love brisket pulled pork and ribs. Was pointed here by a coworker from Texas who kept sending pictures of food and making me jealous. So much to learn, but as long as what I make dosent make me violently ill, there's worst thing then eating ribs....

Smoking for first time today and am confused about one thing. I am cooking ribs and have a general understanding about everything except how to tell when they are done. I know a thermometer won't work since they are thin. But I also read you can't open the door on the electric smoker till they are done. So since I can't fit through the 1/2 inch hole on the top of the smoker what am I missing?
