A friend gave me some salmon he caught in New York so I decided to try making some salmon nuggets for the first time. I did a dry brine for 8 hours then let them overnight in the fridge & am smoking them now.


I put some salt in as well to keep the fish company...


After seeing all the mailbox mods for the MES & AMNPS I figured I might as well try it out. I already had one elbow & had a friend pick me up another one. For test purposes I just used a baking pan & piece of flashing I had & drilled a 76mm hole with one of my hole saws. I taped the flashing to the pan & the two elbows together with aluminum tape & it's working like a champ...

The got disposable aluminum pans at SAMS Club, and you can get aluminum covers too.

How would they work?

That should work fine Todd. The pan I'm using is one of the disposable ones I just didn't have a lid for it so I used a piece of aluminum flashing I had left over. I just took the salmon out & will grab the salt soon. The AMNPS worked great with that setup

The AMNPS worked so good the way I rigged it up that I don't believe I will be buying a mailbox - just gonna stick with my little setup... The rest of the salmon nuggets are officially gone - they were good! I will be making them again for sure...
