babybacks for bedlam

Put out a spread for the OSU/OU Bedlam match. 4lbs. Chuck roast injected with deep beef, rubbed with Ployboy's Bovine Bold. Three racks of BB's. Two rubbed down with Okie Dust, Sa-mokin sauce and original Head Country for the kiddos. BBQ ribs basted with a homemade sauce. Third rack was rubbed with a greek style recipe, spritzed with EVOO and lemon juice about half way. They were served with some pita and homemade Tzatziki sauce.

Decided to through in some gigantic ABT's. Used cream cheese, sharp cheddar, cumin, garlic, pepper. Sprinkled with some Rooster Booster after wrapping.






Also made some black bean salsa, two varieties of queso. WIfe asked for a light salad, so we went with an asian flair. Lettuce, cabbage, slivered almonds, chinese noodles, and a sesame ginger dressing.

They must have been good, I almost missed out!

I missed my plated shots as I was focused on the game, but here is a shot of our game day snacks. I am pretty sure that I am going to have to join Tim on his diet!



good food, good friends, and a great bedlam match up.
We totally forgot to slice the roast for smoked sliders but I think we faired pretty well and the chuckie made for some good leftovers yesterday!
