Yetserday i tryed a new BBQ dish, called "Pocetta". A Porkbelly stuffed with Onions, Garlic, rosemary and thyme.





Pastrami and Pocetta, no pics from finished Pastrami, because it was for my brother-in-low and his Grillparty.

Pretty cool! My oldest Daughter did her Culinary externship in Italy. She spent 5 months cooking in Ristorante Zeppelin in Orvieto. The Chef/Owner specializes in Whole Hog Porchetta. Pretty amazing how they bone out the Pig, stuff it, roll and tie it, then Roast the whole deal until the meat is tender and the skin is so crisp it almost shatters when cut...JJ
 
Looks good. That is something I have been wanting to try in my Wood Fired Oven
