HUGE Beef Back Ribs

BF wanted to try some beef back ribs, after I rubbed, smoked and grilled the rib plate from a standing rib roast for him.

Picked up the smallest package I could find. Figured I'd do a modified 3-2-1 on them since they were so big.

Ribs cleaned up and ready to be split (using 2 different rubs):

Here they are split and rubbed, resting about an hour before going into the smoker: Java Rub (recipe from a fellow SMF member), and some brisket rub on the right.

After 3 hours in the MES 40 at 250" with hickory and some JD Whiskey Oak Barrel Chips, getting ready to wrap in double foil - Brisket Rub-foiled meat side down with some Butter, Honey, Bit of Brown Sugar, Tiger Sauce and 1/4 c beef broth

Java Rub ready to foil with Butter, Agave Nectar, Tiger Sauce and 1/4 c beef broth. Both back into smoker for another 3 hrs.

Out of smoker and onto grill for saucing. Brisket Rub got KC Masterpiece Hickory Brown Sugar

Java Rub got Cookies Barbeque Sauce. Served with Italian Marinated Grilled Zucchini and Yellow Squash and tossed salad.

Great flavor on both but we preferred the Java Rub. I think they needed to braise a bit longer since they were a bit harder to bite off the bone than my spares usually are. 

Will definitely be doing these again with cooking/smoking time adjusted.

I enjoy beef ribs. It is just so hard to find meaty ones around here...Looks good...JJ

Yabba dabba doo, I think that was The Flintstones call sign. Look great .I suppose they turn up from tome to time depending on how the cutters break up the beef. Here they cut them crossways leave them meaty called asado to South Americans.You end up with a long strip with 3-4 rib crosssections. I like your way better. MICK
 
Thanks! They were Fred and Barney size...we called them Dino Bones. 

Don't know what RD is, but probably not here.

Thanks Gary. They had great flavor and moist, just not quite tender enough to bite cleanly off the bone. The Java Rub was outstanding. Rock took leftovers, stripped from the bone, in his salad for lunch.
