this was a total impulse smoke, was watching rib paradise on tv at 4pm had ribs in the smoker by 5!
de-membraned and rubbed
split one rack in half to fit them all on the top grate

cooked 321, at 225* and finished half on the grill with some sauce the other half without. Texture wise they were cooked just the way I like it but I still haven't gotten the flavor I want from ribs.
