Bacon Wrapped Chicken Thighs with play by play - 2/19

Going to battle the 15-20k winds and smoke some chicken.  Using a mix of Cherry and Hickory.  Will keep you posted.

They're done!  Smell awesome.  In a cooler resting now.  Dinner isn't for an hour yet.  Nice, fun and easy smoke (other than the wind).

Good luck from Largo. I have the same winds and I'm planning on grilling a pork center cut loin on the Weber with some lump and mesquite. The winds won't allow me to smoke it today without a constant battle.

Good luck, it looks like you've pulled it off!

 

PS How close are you to Clearwater/St. Pete?

I'm in Trinity (Pasco County).  The wind was a bitch, but I had nothing better to do.

At first i thought they were whole thighs but it looks like you de-boned them and rolled them, is that correct? They look awesome!! Could you give a little info on the prep I would love to try them. Thanks!

Thighs really are my favorite part of the chicken.  I did it the lazy way this time....  Bought boneless / skinless thighs from Sams Club for cheap.  Marinated them in Italian salad dressing and soy sauce, mixed in with pepper, salt and garlic (overnight).  Rolled them in bacon and smoked them!!   It was that easy.
