Going to battle the 15-20k winds and smoke some chicken. Using a mix of Cherry and Hickory. Will keep you posted.
Good luck from Largo. I have the same winds and I'm planning on grilling a pork center cut loin on the Weber with some lump and mesquite. The winds won't allow me to smoke it today without a constant battle.

Thighs really are my favorite part of the chicken. I did it the lazy way this time.... Bought boneless / skinless thighs from Sams Club for cheap. Marinated them in Italian salad dressing and soy sauce, mixed in with pepper, salt and garlic (overnight). Rolled them in bacon and smoked them!! It was that easy.
