1st time smoking a whole turkey..what can I do with the giblet and neck?

Hey group... You all have been very helpful and informative in the past, so I thought I'd ask this question. I am smoking a turkey today (basically as an experiment, they hand out free turkeys at work, and my in-laws already have a family dinner bird). It's just over 13 lbs. I brined it, and am going to apply a dry rub before I start to smoke it. First off, I have NEVER cooked a turkey myself before. What can I do with the neck and giblets? Thanks!

Put them into a pot with some chopped onion celery and carrots and water. Cook them for about 30 minutes. Strain off the liquid and reserve - discard the vegetables. Chop up the meat and add to your gravy using the stock as a base. Very tasty.

Put them in the pan under the turkey that you are catching the drippings in, along with some chicken broth. You can also put onions, garlic, carrots, etc. in the pan also.

Yep, smoke and braise until the neck meat is tender, chop the gizzard, liver and heart very small to add to the gravy. The neck can be pulled off the bones or will fall apart easily if braised slowly. Do the gravy like described above.

 

 

I've smoked them, then braised on the stove top if I didn't have room due to adding taters, etc to the smoke.

Giblet Gravy

 

Take some drippings from the turkey with some broth and boil the giblets with it.

add a chopped boiled egg and cornstarch to thicken................... enjoy.
