Hello, it is hunting season...or I should say it is just about over.  Bought a new smoker at Cabella's and have a couple Elk to smoke and some other stuff too.  Took an antelope to the local "wild game processor" and thought, I could do as well.  Anyway, I want to learn.  Any advice or ideas would be appreciated.  I did smoke some Salmon and it turned out really well.  Think I should have kept it in the marinate longer.  What about doing hunks of ELK?  Any thoughts?

We don't have a very big herd of Elk in PA, but you can find plenty of help on this forum for that.

The only contact I ever had with Morgans was playing horseshoes with Morgan Shoes---Loads of fun!!!
