Get a gallon zip top bag and spray it with non-stick. Put the sausage in the bag, get the air out, and zip the top shut. Mash it flat to fill the entire bag and put it in the freezer for about 30 minutes. Then cut the sides of the bag, peel it back, add your filling and use the bag to roll it like sushi.
