Had a friend request a couple racks of babybacks on short notice this week. Since I had never done ribs on my new grill, I said "Sure, I can do it"....Duuuuhh!! At this point I changed my mind but it was too late to say no. I threw them on the Holland and hoped for the best. Checked em at 30 mins and they looked like they had been smoked for a couple hours on my smoker. At this point I added water to the drip pan more hickory Flav-o-buds to the tray and cooked em a while longer. He arrives to pick 'em up and I basted one side...cooked for 5 mins..flipped and repeated! Foiled them and sent them with him...figuring they were gonna disappoint. NOT SO!! He called to say 8.5 score on the ribs...guess I got lucky! Was not able to check the smoke ring because I was cooking to "order" and not about to cut into the racks. Homemade sauce was a nice touch IMHO!
