Baby Backs in a hurry

    Had a friend request a couple racks of babybacks on short notice this week. Since I had never done ribs on my new grill, I said "Sure, I can do it"....Duuuuhh!! At this point I changed my mind but it was too late to say no. I threw them on the Holland and hoped for the best. Checked em at 30 mins and they looked like they had been smoked for a couple hours on my smoker. At this point I added water to the drip pan more hickory Flav-o-buds to the tray and cooked em a while longer. He arrives to pick 'em up and I basted one side...cooked for 5 mins..flipped and repeated! Foiled them and sent them with him...figuring they were gonna disappoint. NOT SO!! He called to say 8.5 score on the ribs...guess I got lucky!



    Was not able to check the smoke ring because I was cooking to "order" and not about to cut into the racks. Homemade sauce was a nice touch IMHO!

    Well, yes. They are nothing more than hickory pellets. I could have gone to the woodpile and got a piece of hickory to provide the smoke but..well..I was in a hurry!

    The Holland cooks at around 400 but when the drip pan is full of water it can be between 300-350. The temp increases as the water warms. I think that in the end I cooked 'em for an hour and a half total. Thirty minutes or so on the grill at 400 and around an hour with the water in the pan and cooking at 300.

    What do you think about the Holldand grills. THey have bene very popular around here for about 15 years or so, but I've never taken a liking to them.

    The anti-flare up works too darn good to me, and I can't seem to get it up to high searing temps. I like it when the grease flares up, but then I'm a pyro.

    They come with smoker trays now?

    Hey, I love my Holland but it ain't ideal for searing. You can sear if you place the meat on the edges of the grid though. Can't beat the weber kettle for searing. The Holland is just so darned versatile and simple. They do come with little aluminum smoker trays that work surprisingly well. The trays work ALOT better than the smoke pellet "drawers" on earlier models.
