Not the prettiest deviled eggs, but not bad for my first attempt! Hard boiled, peeled and then put in the MES 40 with the AMNPS. Finished product dusted with my homemade bbq rub. Thanks for looking!
How'd they taste?
They took on a good amount of smoke flavor. I used oak pellets, they were in the smoker for about 2 hours, the tray went out in the middle. I re-lit and let them go a bit more.
How much smoke will the eggs take uncooked with the shell on Miersc77? As far as the AMNPS, it is a great investment. I did a Boston butt on Easter Sunday and I chose not to use the AMNPS and was adding wood chips every 30 minutes it seemed. The whole reason for the MES in my eyes is to bbq without babysitting and the AMNPS allows you to just relax while it does the work!
Bus thanks for sharing. Filling to what you and the family like is the right thing to do.tropics- they smoked for approximately 2 hours. Filling is Dukes mayo, salt, fresh ground black pepper, and my bbq rub. I'm not a big fan of mustard or relish in my eggs, so this is kind of plain for most people I'm sure.

They didn't dry out any during cold smoking. I set my MES at 100 degrees, so it wasn't completely cold. The AMNPS I have just takes pellets. Also consider Miersc77's method above with the uncooked unpeeled eggs in the smoker at 230 for 90 minutes. The color that his eggs took is incredible. Mine had a slight brownish/yellow tint after about 2 hours, nothing compared to what his did! I think I will try his method next time to compare flavor. I love this forum, because everybody has ways to do everything and none of them are wrong!

Your Deviled Eggs look great and sound so good. I did have a question for you.
Did your hard boiled & peeled eggs dry out any while cold smoking them? I am looking to get a cold smoker from AMNPS if that is the model that will use both pellets and dust.
Darn it! now I am craving Deviled Eggs! I guess I will make some for this weekend.
My husband and son like horseradish in the deviled eggs I make for them. It adds a little kick
to them.
