Wrapping Pork Shoulder Late

Tonight I am going to put an 8lb shoulder on the smoker before I go to bed. Plan to set the temp around 250 and let it sit overnight. I usually never wrap or pan a butt, but I panned one specifically for a recipe a few weeks ago. I like a good bark, but I found that the one that I panned softened the bark just a touch and it came out great.

My question is this. Would panning the meat after it sat in the smoker for around 9 hours be worth it? Is there any problem with panning and covering at the later stages as opposed to panning after it gets to around 160?
 
Wrapping in foil or putting in a pan and covering is the Texas crutch. It’s used to pull the meat through the stall. It basically speeds things up.

You’ll have plenty of smoke on your butt over night so wrapping it after that isn’t any issue I see.

I foil or pan all my butts. My family likes a softer bark more so then a thick harder bark. At 250 in an overnight cook that butt may just be done when you wake up. Let us know how it turns out.

We are just the opposite of Chris, we like the thick bark, so we do butts at 270-280.
No foil, no stall & about 1 hour per pound.
