No photos to share but I marinated 2 small chuck eye steaks in Worcestershire sauce intending to cook them yesterday but the day got topsy-turvy so they marinated an extra day. I did not want them to marinate any longer and turn to mush so today I grilled them over an oak fire and a neighbor and myself each had one - man were they tender and tasty.

That Worcestershire sauce is good stuff.

No.
Love chuckeyes. Pretty tender as they are. I bet those were great .
They were falling apart as they hit the grill - I think the vinegar in the Worcestershire done its thing. I love the taste of chuck over any other cut of beef.

Strange how a beef shoulder and a pork shoulder are my two favorite cuts of meat...

French's or Lea and Perrins in that order, chuck eye's are great but hard to find.

Bad thing is there are only a couple per cow lol

I had never seen them until last year. I honestly think they are every bit as good as ribeye. Our local savealot cuts then when they run chuck roast specials.
If I understand correctly, they are, in fact, a little bit of the rib eye that is left when they separate the chuck from the ribs - or something like that. Whatever the case, they are great steaks - chuck flavor and very tender.

I've had plenty of chuck roasts but never a chuck eye steak. Is it one of the muscle sections of a standard chuck roast? If so, can you cut up a regular chuck roast to get the steak and then use the rest of the roast for something else? Just wondering.
