Hello,

My name is Bryan and I live in the thriving community of John Day, Oregon. I am an avid hunter and fisherman, along with my outstanding and amazing wife, Sherri. My two girls accompany us on all of our outdoor adventures. My oldest, Brandy is 3 1/2 years old and Lady is 2 1/2. they are sisters from the same kennel, :-) My profile pic is a pup from Lady.

My smoking experience is, at the best, NONE. I tried in my Big Chief with a rack of pork ribs and they turned out edible. If you know me, very few things that can't get away first are edible. I have also tried to smoke in my Char-Broil charcoal grill with offset ribs and chicken and in my big gas grill, again offset with low heat. Some of these experiments were not even edible. :-(

I am learning and studying but it is hard to verify who's information is accurate. With the price of meat and my lack of hunting and fishing success the past 2 years, I am a bit leery of any more experiments.

I am going to post information about my first proposed build in the refrigeration builds.

I am pleased to have so much expertise at my fingertips.
