My youngest son is getting married, in a small ceremony, Monday and I am bringing wings for the after party. This will be my first attempt at wings on my Traeger, hope they come out well. I have to do this in 2 steps because of the time involved. I am cooking them on SS at 180° for 1½ hrs today. I will pull them off and put them in the refrigerator, then finish them off tomorrow at 400°, to get them nice and crispy. At least this is the plan. Here is a shot of 11lbs of wings on my 1300.


 
Sounds like a great wedding gift! Congrats on your son's marriage.

What internal temp are you taking them up to today while on the super smoke setting? I'm intrigued by this. Assuming you are fully cooking them today, and then the high temp tomorrow is to crisp them up?
 
Thanks it's his second one so that's why it's small private affair. I am doing the SS at 180° but I don't think they will be fully cooked when I pull them and put them right in the fridge. I will put them back on tomorrow at 400° and they should be fully cooked but the time they get crisp.
