Wife bowls one night a week....

and she she really isn't into trying new smoked things.....so I have a 2-3 hour slot of time one night a week to try new stuff.

Any suggestions for this short of a time. I have been thinking of doing a Fattie or Meet Loaf.

Fattie would be a great idea, they normally won't run over 3 hours.
Some other short smokes are
ABTs, moink balls, pepper shooters wrapped in sausage (a personal favorite), meatloaf you already mentioned, spinach dip.
Does she enjoy anything you smoke? If so then it should be a little easier to maybe work her into trying new smoked things.
Maybe do some chicken and make a soup out of it even using the bones to make a stock, a spaghetti sauce using smoked tomatoes and onions in it, anoter favorite of mine is smoked Italian beef. Maybe adding little bits of smoke into dishes she will begin loving it?
 
Jim has given you some good things that don't take long to smoke. I like the abt's and the fattie personally.
 
My wife likes lightly smoked, but isn't as excited about experimenting as I am. She does love my chicken and turkey. If there is left overs they are used up fast.

Our family is so busy that 3 hours of "ME" is really special

For this week I'm leaning towards a Fattie or Meat Loaf, and may add some veggies. What veggies work well and how long?

Along with the ATB's and Fatties alteady mentioned why not try some cheese or nuts....or both.

Have you tried a shorter cold smoke & sear with anything? Great trick for smaller cuts of meats, and you can sneak in a bit of smoke, then sear on the grill (I prefer charcoal), she'll never know if you don't tell her. I did it for my wife a quite a few times before she thought something was going on. When she asked me what I was doing different, she just shook her head when I told her...now she likes me to cook this way.

Charcoal fired cold smoke and sear is one of our favorite methods for a quicker outdoor cooking session. And, it tastes great with EVERYTHING, including steaks, chops, chix pieces, burgers, country style sausage, hot dogs (yep!)...

If you try this out on your own first, then make some for your wife...just be ready for smiles.

Fatty, Moink balls, and pig candy are all good things to do in short times. Or some Country style ribs. Yum.
 
You could turn out some awsome chicken wings in that amount of time. I have learned to love some chicken wings cooked on my pit. Really good food. Fatties are also a great choice as there is no limit to what ideas you could come up with when smoking a fattie.
