Why Not Chunks?

Ok, this may be a dumb question but I'm a newbie and on my maiden voyage. Presently cooking a pork roast and noticed how much the temp drops as I add new wood chips.  I have a Masterbuilt XL propane smoker and it says to not use chunks.  Just curious as to why but not willing to find out on my own by just doing it :-)  Any answers?  I've much to learn before I can take the pebble from the hand!

Morning and welcome to the forum.....   Chunks will catch fire....  It takes 2 pieces of wood to build a fire....  So, to overcome that problem, I have used 1 chunk in my Totem electric smoker....  They last for an hour or so.... remove the old chunk and add a new one to prevent flare up...

I used chunks in my master forge double door propane smoker. If your unit has a similar chip pan then it has cover. Toss a few chunks in there and put the cover over it. They will not burst into flames and will work much better than chips.
