Why aren't my snack sticks crunchy?

My snack sticks have been coming out tasting great but they don't have a snap and crunch biting into them. They are soft. What can I do to make the sticks crunch?

Ok maybe crunchy is a bad word for them. I want them to snap when I bite into them.

Using sheep casings gives them a nice snap when you first bite into them.

Do ya have a pic of the finished product? It might be that they haven't dried enough, place them in a paper bag in the frig for a few days and see if they improve.

We did up about 25# of snack sticks, and like you have, they were tasty but soft. Tossed them in a dehydrator, and Bam, we had delicious and snappy snack sticks! I used my electric smoker, but it just wasn't drying them out.

Excellent idea with the dehydrator. They are amazing now after only 30 mins!
