Where’s the Spaetzle?

All these amazing, delicious, German meals appearing in the last week are making my heart sing! But where’s the spaetzle? It’s the best German side dish ever. Crisp it in brown butter and freshly ground nutmeg and it makes me want to polka!

When we were in Germany (MANY moons ago!), I got hooked on jagerschnitzel (at a restaurant called, IIRC, Franks in Frankfurt) and the seemingly ENDLESS variety of sausages available...I never got around to spaetzle!

Sounds good, now I have to go look it up
I have never had, but when you are done with the Polka dancing, maybe a dish of spaetzle can be made.
