Me & some family memebers just purchased 275 gallon hog roaster & after picking it up i noticed it hasn't been cut on either side and the way he cut the door makes us feel like we couldn't add second rack. We are thinking about just doing offset firebox from like an old wood stove but we also thrown out a charcoal drawer. Do have short video but not sure how to post but will get more pics this weekend. Thanks in advance for help & advice.

Hi there and welcome!

Wow that looks like a giant beast of a contraption.

How does it currently work to cook?

I ask because you might have ways to just add wood splits/chunks, etc. without much modification.
Also I'd be curious if adding something like a Mailbox Mod with something like the A-Maze-N Pellet Smoker (AMNPS) pumping out perfect smoke lol. The AMNPS may not be enough for a giant this size but the idea is what I'm more interested in.

Anyhow, neat looking contraption :D

Just picked it up on Wednesday, hopefully we can try and cleaned up next weekend and fire it up. As of right now looks like they just used wood and charcoal and closed the lid and let cook away. Grandparents had old like bbq pit so we are thinking about building pit back up and run pipe from that to smoker so we won't have to cut a few more times and wont have to pay for welding.
