So I have built my smoke house final interior size is 48"x16"23". I did a test run today with my electric hotplate and the cast iron skillet on it to see what temp I could reach. After almost two hours I only reached 128 degrees. I was thinking of installing a gas burner that came off an old grill that was mounted on the side. My thoughts were to cut a ring in the bottom of the smoker since the burner already had the circular pan and the burner mounted to it, I am wondering if there is going to be an issue with the burner attached to the plywood base. The burner is mounted inside a 10" ring with a large hole under the burner for the gas tube to hook up to the temp control and tank. Would I be able to use the gas burner for generating smoke or should I use the hotplate with the cast iron skillet for the smoke, I only have a 16"x23" base to work with and not sure if I should cut the hole for the burner off to the side so I have room for the hotplate as well. Any suggestion or tips on my deisgn would be helpful. Sorry for all the crazy bable, just want to get it all right for the first smoke of venison sticks!
