what to stuff a cured pork belly with?

I have some belly curing right now and I am wanting to stuff a piece with something and cook it on the smoker. I was going to use sausage but I am wanting some other ideas.

That is interesting, I have a few butts just cured and was thinking of grinding 1 butt and stuff it into sheep casings for snack sticks.
