What to smoke if you don't have a lot of time.

Hey everyone. I have a 4 hour drive ahead of me coming home from the beach, but I definitely want to smoke something for dinner tonight. I received my AMNPS on Friday and would love to give it a test run, although I may wait until next weekend.

I'm looking for something that I could smoke in about 3 hours or less. Anyone have any ideas for something quick?

Chicken my friend!  Get you a nice roaster, give it a good rub, set the smoker at 275* - mesquite is actually a pretty good flavor for the birds just don't overdo it.  Depending on the size of the bird it should take you about 3.5 hours to reach an IT of 165.

Good luck - I hope you get your smoke in before bed time!!!

Yes I do.....  A big, huge thick rib steak and then throw it on the grill...  I would use mesquite for 1 hour....  

that makes me hungry just thinkin' about it.... ....  and maybe a few shrimp and shrooms to go with it.. and some slices of onions.... and maybe a head of garlic.....  and a baked potato....   then some lettuce for a wilted salad....  and butter for the tater and steak...  I like butter on my steak, and roasted garlic and sweated smoked onions..... 

Well, that should about cover the first hour with time management....  I haven't tried smokin' a beer yet..... haven't figured out how....

Hi Dave, I haven't smoked a beer either but I had a smoked beer at New Years.  Never again...tasted like the time I picked up the wrong beer when I used to smoke cigarettes.  You know, I had one I was drinking and one where the cigarette butts went and I drank out of the butt can....NASTY!

One of my favorite quick smokes is pork tenderloin.  Also turkey breast.  Both run around 2 hours at 225, but I think it would turn out fine getting them done a bit quicker around 275.
 
Throw on a naked fatty for a snack. 

Chicken thighs - do them a little hotter. 

A nice thick steak fits your time table nicely - do a reverse sear - 

Now I'm hungry...
