What to do.....

...with a whole chicken today. My wife has to work tonight and I usually always have her something to eat before she goes to the hospital so I thawed one out last night with very little thought on how I was going to cook it. Sorta kinda thinking about spatchcocking, injecting, then smoking. Or cutting it up and grilling or frying.

Really looking for other ideas and suggestions. What have you got that would be fairly simple and quick? I know, it's kind of a late notice, but this place is full of cooks who are much smarter with much more experience than me.

I like the kettle fried chicken idea, but not sure that I want to try that today.

Spatchcocking, prepare however you like (can rub or inject, or just season with some salt & pepper) and putting it where you can get up to at least 400* ... pretty easy, super fast, great skin, still juicy.

Thanks, I was kind of heading in that direction, but was thinking that someone would hit me with that "eureka" idea..... :emoji_grin:
 
Yup, hot and fast for birds, works every time.
If you can wet salt brine it for a few hours it gets even better.

Wet brining would be nice, but I don't have that kind of time. Wife leaves for work around 6:15. Night shift nurses sleep all day so that they can save lives all night...
 
If you've not got it on the smoker by now... not thinking your gonna make it.. only thing left this late would be grilling...
