what temp to pull smoke shoulder?

I have a 9.5 lb butt and have three probes in it rn they are 189 183 198 at what temp should I pull it out of the oven(don't worry I smoked it for 7 hrs then transferred) But I read conflicting temps some people say 195 some say 21? what gives? What temp do you like to pull off the heat any why? It's late and last minute but I hope someone is on and reads this. I did search using search features and nothing came up.
