What should I smoke?

I finally have an entire day available to smoke something on sunday the 22nd, What should I smoke? I have already done a butt, brisket, jerky and chicken. I was thinking maybe bacon, more jerky or something new. Any ideas?
 
I second the fatty! Give it a try, you'll like it.

a fatty could be cool, what do you do? Slice it up and indulge, or is it like a stuffed sausage burger or something? Also, how long do you smoke it, to 165?
 
why not slow smoke some beef and/or pork ribs?? The beefies will keep you busy for a good 7 hours if you take it slow. Babybacks will run you around 5 or 6 hours. Plenty of time to relax and catch a nice buzz. A fatty wouldn't be a bad idea either.

If it was me, I'd buy some beef skirt (fajita) meat and let it go real slow. Once its mouth watering tender, cut it across the grain into strips. Throw some flour tortillas in the smoker and let em firm up a bit. You get melt-in-your-mouth fajita tacos. Serve with some avocado, salsa, and maybe even some chicken strips.

Great, now I'm hungry again and 1:00 a.m.

Turkey with a nice cajun-style rub is always good, plus if you make pot pie with the leftovers the smoke flavor it adds is a great change from the usual. Of course a fattie on the side is good too.....

Go get a corned beef brisket, they are probably on sale. Spice it up, smoke it, and you will have some great Pastrami.
 
"What should I smoke", well if you asked my roomate in college, you would get a difference answer; but I digress.

I second the turkey nomination. Turkeys are cheap this time of year and they feed a lot of people.
 
Do a couple of Fatty's, some ABT's, some ribs (not on your list). Whatever you do, smoke something and drive your neighbors crazy.
 
I smoke my fatties for 4 hours, comes out perfect every single time I have made them and always go for 4 hours. Usually you will see ones on here stuffed with this and that, not only do you get to play around with fillings but that flavor of whatever paired with the smoked meat can't be beat. Not to say that you shouldn't just rub one down and smoke it just like that, then you can cut a slice anytime you feel like it, put them on a biscuit, sometimes I slice them and just have a snack cold from the fridge. Not matter what you smoke you should definitely give a fattie a try. Need some ideas for some there are plenty to choose from on the site, or just send me over a pm if you like.
