I am new to smokin and have seen the word fatty and one ole boy showed a pic of one with bacon wrapped ever so nice around it. but it seems there are several types of fatty's.
I tried googlin fatty..my oh my what came up there.
so I would love some recipes and definition's as I guess there are several types of fattys. of what a fatty is and how to make em and smoke em and any thing else that might help.thank you for your help..

Your basic Fatty is just a tube of Jimmy Dean Sausage without the wrapper placed on one of your smoking grates.

thanks for the help so far..But please keep the thread going with more info. this thing sounds interesting..wait till I tell the wife that they named a smoked food after her.LOL.

I have tried a search for fatty's, but, I will tell ya it just does not work on my computer for some reason. It brings up several pages that might just have the words "hey I just smoked a fatty today and It was better then squishin puppy's with yer bare feet"lol. not really any usefull info other then making me want to learn more about it..thanks again..

I was goin to add to this post, but I see you got the skinny on a fatty. BUT WAIT". IF IT IS A CHUB OF SAUSAGE, WHY ISN'T CALLED A CHUBBY?

Here's an idea of the possibilites of a fatty, i have done three now.

1 - Italian sausage stuffed with garlic, onion, pepperjack cheese, green chilis.
2 - Pork sausage stuffed with cubed ham and swiss cheese.
3 - (my favorite so far) 1.5 lbs ground chuck, filled with blue cheese, bacon and chipotle pepper puree.

# 3 waiting to be rolled.

Rolled and ready to go on the smoker.

Most times you'll be looking at around three hours at 220 - 250. Like TH said, cook to internal temp of 160 -170

Your imagination is the only thing holding you back on the Fatty thing.... anything you can dream up can go in one...

I like Gramason's idea... make them often... MD fatty - 2 lbs sausage rolled out... fill with lump crab meat chopped onions and shredded cheese.... roll em' smoke em to 165* mmmmm good... try sprinklin' with Old Bay.....

A fatty is what keeps you from starvin while your supper smokes. Ive made them from ground beef, ground buffalo, german sausage, whatever. Have only made one that was just undoctered sausage. They get a lot better than that with a little imagination. The last one I made was whole hog sausage so it was fairly lean. Rolled it out, smeared some chipotle puree and lots of cheddar. Better make two cause one wont last long.

Thanks a bunch folks, I am on to it now, and can not wait till I try one of them.
Yep, I am always in the dog house. but ain't to bad the choclate lab and the little beagle keep me entertaind. but, I will not give em a bean stuffed fatty fer sure. oh yea and thanks for the photos it looked great..

Coyote. One day my wife hannded me a pound of ground buffalo and all she said was FATTY. I thought she was talkin bout me. If I had any feelings Im sure they would be hurt.

smoke freak I would never try to hurt any one's feelins. my wife and I kid around a bunch, I am in the dog house fer ever for it. we were shoppin the other day and at check out the cashier was talking about heart healthy and said her dad said burnt food made your heart healthy. I said I must have the healthiest heart in the world if burnt food made it that way and kinda pointed at the wife.well they both ganged up on me.lol.
