What in the smoke this comming weekend?

I'm traveling the Jerry's (pineywoods) in Tallahassee for the gathering to sit around and watch people drink massive amount of stuff and smoke a ton of food. We are just gonna sit around and visit with alot of the folks I talk to and about for a weekend. I cann't wait it's really fun too. This sopunds like it's gonna be pretty big too. I think everyone should have a gathering all over the country and we could all meet each other. Heck we sit in here and talk alot too.
 
Sounds like there is going to be some great food smoked up by alot of good people. Don't forget the food porn... lol

That might be o.k. about your 1st smoke. Cause after you have your 1st smoke you will be addicted to smoking every chance you get. Doing ribs is a 5-6 hour smoke, possibly you could do that after work? It does'nt have to be only weekends. Trust me
 
I'm gonna try my first pulled pork tomorrow, and I'm expecting a friend that I haven't seen in 15 years to be in town later this week or this weekend. So if he shows up, then I'll try some 3-2-1 spare ribs. Might get some rain this weekend, but I think that I can get away with pulling the MES just into the garage. I don't think I'll die of carbon monoxide poisoning with the door open.

I smoked some spares monday and they were so awesome we ate them before the side dishes were done. I tried my own concoction of bbq sauce that was very good. I think i wanna do more of those this weekend although its suppose to rain, but who cares thats what ponchos are for. Few beers and a screwdriver and ill be singing in the rain.
 
Lookin' like a couple racks of ribs and some chicken thigs ( and MAYBE some beans ).
Get 'em cleaned up and rubbed-down tommorow, and chuck in the pit Saturday.
BTW - I'm still trying to crack the code on those pesky chicken skins. Sure would be nice to get 'em to where the whole skin doesn't come off in one bite !
 
I'll be making a fatty of some sort. I'm thinking onions, peppers, cheese, and some sort of meat (maybe ground beef), wrapped in italian sausage and covered in bacon...
 
I think I'll do a brisket again this weekend. It'll be only my second one so I will be making some adjustments.
 
As I had feared,
not very good Smoking Weather....
So spent some time in the Garage,
was able to put finishing touches
on my New Baffle Mod
to the 'ol Duo...

Maybe get up this evening when she
gets back home...

No time to smoke,
But always time to grill something,
Steaks going on tonight!!!

& were Outta the Park...
Wife enjoys it so, when I cook on Sundays
& Mondays.. lol..


All Mods are done for the time being,
I finished up the Stainless Baffle,
picked up a new shaker basket
& found an Old Smokey Temp Guage
at Academy last night &
pop that on to finish
up the Mods for now.


I got other pics but am now needing to crop 'em
& get them into specs, so hope to have
new pics & a Q-View for this weekend...
 
I'm thinking of smoking a brisket this weekend, and maybe a butt. Gotta say I do love me some pig butt..... lol
 
smokin' some ribs, grillin' some oysters, probably shoot a few raw oysters as well.

1 crapload of abt's
2 fatties
