Quite a few of you may already do this trick for saving flavor for other uses, but for those who don't, here is something to do with your left over au jus, or meat drippings, from your cooks. I take the drippings from the pan I smoked my briskets or butts in and then pour the left over juices off into a jar to be placed into the fridge to solidify the grease so it can be easily separated. The next day I spoon the solid grease off of the top then I place the meat gelatin or drippings into ice cube trays or in the bottom part of recycled plastic butter tubs or the like, to make discs and freeze them. When frozen I then place the cubes into ziploc bags to be used as needed for flavor enhancers in beans, vegetables, soups etc. or reused as added juices when wrapping up the next briskets or butts being smoked. When I bag suck briskets for later serving, I'll place a frozen disc into the bag along with the brisket as I bag suck it to be frozen, so when I reheat the brisket at a later date in boiling water while in the vacuumed bag it will have plenty of juices to be served with it. Cheap and easy flavor enhancers.
