I have made Vortex Ribs many times. Normally 50 minutes temping 200 than 10 minutes with sauce. I could tell from the start Kettle not running as hot as usual and was prepared to take longer. Grill had just been cleaned, New bag of B&B. Been raining so humidity was high. I might not of left the coals burn enough also. Lid temp was staying about 350 most the cook. One hour and they just temping 150. Took about another hour to get to 200. In the end they turned out great and really had a nice smoke flavor. This could of easily been bad ribs if not taking the internal temp. Still not for sure what caused this. Could of just been one of those things. Did not get a plated shot as by this time I had several tequila's and was hungry but had a ear of corn and some Bang Bang Coleslaw. Man is that stuff good! It has sriracha and sweet chili sauce added to sauce. I also used some white balsamic vinegar.

Glad it turned out in the end Brian. Just one of those days .

Love doing singles, and I get the several tequila's so no picture.

If I had several shots , the ribs would have been very well done by the time I woke up, lol
