Venison Summer Sausage/Snack Sticks

Shot a decent doe last night, si I have a supple of venison on hand.

Hope to get some summer sausage in the smoker shortly.

Have made caseless sticks before with my jerky cannon, but want to try some with collagen cases.

Tips on the collagen casings? Never used them before.

Nothing too different when stuffing them. I would just get a snack stick kit from Cabelas and go from there. Enjoy them and teach someone else how to make them. Keeping the future of sausage making alive for future generations to come.

Make sure you measure your smoke house first in case you are hanging them from Dowels,,, you do not want them too long. 

A full smoker is a happy smoker

Hi Bill, I picked this up at gander mountain the other day. It comes with everything you need. This will be my first time doing snack sticks.

The fake casings are just easier to use.

I made 38 pounds of sticks a few months back and even turned the local deer processor away from the collagen casings when he helped me make some last year with the fake casings.
