Been wanting to make hots for a while now. Finally got around to it yesterday. I made 20 pounds using the Sausage Maker's recipe. Did half with jalapeno peppers and extra sharp cheddar.
I used 14 pounds of venison 5 pounds of pork butt and 1 pound of pork back fat. For my first try, I'm pleased with the results.
Just loaded.
