I have a old commercial freezer I converted to a smoker. I got a old electric oven and transferred  the guts to it so i could control heat with the oven thermostat. It works good but i dont like it cause i cant smoke above 180 cause of the insulation and don't want it in my garage anymore.  I want to build a smokehouse in my yard . My question is' has anyone tried to use a old lp oven burner with controls for the heat sours? I also use a smoke generator . Thanks  Dean

I was thinking about the same thing I built a nice electric smoker it works great but I need a smoker that can do 100-200# of sausage at one time I can do 50# now but takes 15 hours

I just made #100 of summer sausage a couple weeks ago and it took about 9 hrs. Turned out great

Its a old commercial  freezer that came from a Bar. I took the controls and the heating element and put them in the freezer.I removed the door gasket and replaced it with cotton rope . The inside is lined with aluminum i removed all plastic and replaced it with stainless.
