Use of water pan

I have not had time to completely use this web site.  As of yet, I have not seen posts on using a water pan.  I know that many smokers do not have a water pan.  I have found on certain items that I smoke, using the pan adds moisture, and gives the item a better flavor. 

My question is when I should use the water pan and when I should not.  Thanks.
 
What kind of smoker are you using?
