UMAi fermenting temp ?

Can I hang the bags in a 60* F room?
If so should I let them cure longer?

What do UMAI directions say ???
Dave they recommend 65°F my basement is hold 60°F some times less.
The process 3 days at about 70°F then into a 38°F fridge,that makes me wonder if I can get away with this temp.

The 70F degree temp is to allow the bactoferm T-SPX to grow at it's optimum temperature...
It's important to follow the recipe as close a possible...

It totally depends on what fermenting agent you are using. Some ferment at lower temps, & some ferment at higher temps. Personally I'm not a big fan of T-SPX. I prefer to use FRM-52, I think that is the one I use, I went to look at the bag & it was vac sealed so you couldn't see the name. But it's a quicker acting ferment made to be used at higher temps. I only ferment for 24 hours at a room temp of 80 degrees. Works perfectly for this Florida boy!

When I moved to Fl in 1970 I worked out in Coral Springs. It was just swamp land. When I first started out there. There were about 150 homes. I cleared the land & put in house pads & asphalt drives & parking lots.Lots of snakes & gators, but now it's a huge city. Haven't been back in 15 years, but I bet it's huge now!
