as previously discussed in other threads...starting up two boneless butts at o-dark-thirty tomorrow - thats like about 6A when the labs decide I they need food.

here is the prepped pic. they are now resting nicely in the refer till get up all probed and ready. I decided to inject with apple juice, rub throughout, and tie em up. stay tuned

Thanks! not too worried about the timing, if they take a while and we eat PP on Sunday all will be fine. this is for my wife and I only. stocking up for other cooks and freezing for winter PP sami's too.

welp butt will be butts....stalled out at 202-204... I think i will give them a little longer and call it. the probe therm goes through like budda so not too worried. was hoping to hit something over 210 but that seems kinda senseless now.
 
I find the stall hits around 170 on butts and brisket. I generally pull at 195/200, foil and wrap in a heavy towel and into a cooler for an hour or two. Then eat.
 
took them off at 205 wrapped and pulled. tomorrow we will feast! (missed tonight dinner, but not unexpected)

this is the smaller one, the bigger one was more juicy. both were tasty!

Looks good! Nice bark in the mix. I have made a pulled pork, onion and cheddar omelet for breakfast. Pretty danged tasty. Wife and son thought I was crazy. But I liked it.

I would totally do that!!! I love using smoked meats in other dishes
 
My first one was as is. The second I chopped the meat into smaller pieces. Real tasty!
