I'm doing a cook for 15-20 folks next weekend, the meal is Sunday lunch.  I'm planning twice smoke potatoes as one side.  I was wondering if anyone had tried cooking the potatoes the day before, then finishing them day of.  I'm looking at some things to save some time day of and wondered if they'd turn out alright if I cooked them, them made the filling prior,  Then I'd just have to cover them with cheese and heat them up on Sunday.  Any thoughts?  Thanks in advance as always.  
 
thanks, that's sorta what I was thinking.  Just wondered if anyone had tried it.  
 
Yes that is the way to go. I have done it lots of times. prep them up all except for the fresh toppings and garnish and smoke for a while the day of. If it makes it easier the day of with whatever else you are cooking i am all for it.
