tuning your pit

someone pm'd me w/ a question that got me to thinking. if ya got a new smoker & you want to get to know it first before ya do meat. maybe on yer grates use 3 large disp. turkey pans filled w/ water (salted water) to simulate what a pit full of meat will soak up the heat. any ideas opinions ???
 
I suppose it could be done that way, but how the meat absorbs the heat is the result of proper tuning. You should be concerned with the temperature at the grate level from end to end, which will directly affect how evenly the meat will take the heat.

That's my opinion - others may vary
 
this site needs a tutorial on tuning a horz. pit.......a sticky in werds for us that just got one.......or is getting one for christmas, like myself.......i mean, along the line of baffles and tuning plates........
