I tried searching cured smoked porkchops.

My favorite way to make "cured smoked pork chops" is to make the whole loin, just like you make CB. After the loin is smoked, cut them however thick you want your pork chops to be.

Actually they taste like the cured & smoked pork chops we used to get at the PA Dutch butcher shops around here. Mrs Bear doesn't like most meats smoked, but even she loves these.

If I had to compare it to Bacon or Ham, I'd have to say "In Between".
