Hi Everyone,

So recently I bought a Napoleon 200, I'm really enjoying it and yesterday after much reading, I did my first Boston Butt. It was Boneless and just under 5lbs.

10 hours and 45 minutes at 225 with some fluctuations, Texas crutch at an internal of 165 to 201, rest for 30mins. I made the best fajitas I've ever had with it!

I was really happy with the bark and the smoke ring.

I half a bag of royal oak briquettes which burnt out quite quickly, and half a bag of kingsford blue.

I wish I could put videos in, as I have one of me pulling it apart with tongs!

Thanks guy's I'm a lil proud, not bad for my 5th cook!

How much charcoal should I be using for something 11 hours? I'm wondering if I need to gasket
 
Looks really good from here especially for your maiden voyage into butts.

Probably nothing different at all. I over cooked my first butt and the meat came out mushy. I was too busy worrying about my smokers temp, the stall, and getting my family sick. That I let it go to long. Yours on the other hand looks to be perfect. Only thing missing is my plate.
