I can never seem to get Tri tip that's not preseasoned/premarinated in my area. I was up in my hometown in Northwest PA over the Holidays and my sister in law gave me two Tri Tips from the Walnut Hill farm. Having had their beef before, I knew it was going to be good.

It was just under 2lbs but that was fine by me. It definitely had a more robust appearance to it than the typical store bought meat I get. Very little fat/silver skin to trim off, then it was time to rub with some EVOO and SPGO and fresh Rosemary and into the bath it went.

Since I was going to reuse the broth for gravy, I didn't want to go overboard with the Rosemary any.

Set the Inkbird to 142 for 8.5 hours and away it went. I really like this Inkbird, as I have been using it quite regularly for the last 7 months or so. So far, it has been working effortlessly.

After 8.5 hours, I dried it and let rest for 20 minutes, then threw on the charcoal grill for about 3-4 minutes per side and then it was done. Even though I messed up on the left side in cutting it, this was just about as melt in your mouth as it gets. I would have like it to be a little more on the rare side, but the wife likes it a little more on the done side. Needless to say, even with just three hungry mouths for dinner there were no leftovers.
