Yes sir, ill wrap her at 165 with butcher paper and take her to 195. Unwrap then and let the bark tighten for a bit before wrapping again with paper, then to the cooler she will sit.
 
Awesome! We love Tri Tip brisket. It feels like a sin until you try it, then you realize TriTip is a blessing either way!
