Just recently completed my custom build after much research. Reverse flow off set smoker set up for tri-fuel operation. Wood, charcoal, or gas. With removable baffle plates between the cabinets it makes it possible to either cook in the drum only, warming cabinet only or in both at the same time. I built the warming cabinet so that a full size chaffing pan will fit on the shelves. That way I can cook or keep sides in their pans. So with the size of both I could handle up to an estimated 24 pork butts at one time. First weekend out I ran it almost 30 hours straight doing pastrami, Boston butts, baby back ribs, and corn on the cobb. Give me some feed back and let me know if anyone else is running a tri-fuel.
